Put the lime in the coconut- strawberry shortcake

Its another one of those Friday nights and we are watching DC CUPCAKES on TLC and husbands sweet tooth kicks in..... he wants a strawberry shortcake so....... I need to modify this to suit how we eat...... I once read in OXYGEN MAGAZINE to substitute flour with protein powder so I decided to give it a shot :) and try and make lime-coconut biscuits :)

Preheat oven to 350 degrees

Here is what you will need:

-1.5 cups vanilla protein powder

-1.5 cups grated coconut flakes

2 tsp baking soda

-2 eggs

-1/4 cup organic EVOO

-1/4 cup I CAN'T BELIEVE ITS NOT BUTTER

-1/2 tbs lime juice

-10 large strawberries

-1/2 tbs coconut flakes

-1 packet of truvia

-mix your dry ingredients in a medium mixing bowl..... create a little funnel in the middle of the dry ingredients. Mix in the eggs, evoo, faux butter and lime juice and mix just lightly mix together until its a clumpy dough (do not over mix).
Now drop about 2 tbs of dough about 2 inches apart of a greased baking sheet and bake for 8-10 minutes.

***be sure to stick a toothpick in your biscuits and if they come out clean then they are done

Now slice strawberries put them in a bowl and mix with coconut flakes and truvia and let sit about 20 minutes so they get juicy :)

Now put your shortcake together and enjoy! We did

   





Fried rice....... hold the rice :)

I went home just like I normally do at my lunch hour ate my cabbage and steak saute.... afterwards I was hanging out in my livingroom and I noticed a few cars next door to my neighbors house (my parents house) so I went to check it out..... my teenage nieces were there eating teriyaki chicken, fried rice...... and the fried rice smelled AMAZING.......

So inspiration for my dinner! :)

Here is what you will need!

-16oz ground turkey

-1 tbs onion flakes

1/2 tbs minced garlic

-salt & pepper

-1 head of cauliflour

-2 cups of fresh brocolli (I cut most of the stem off)

-1 cup of egg white

Low sodium soy sauce

-1 tbs I can't believe its not butter

Squeeze of half a lemon

Here is what you do :)

Cut most of the stems of your brocolli and cauliflour and put in a medium pot then put in about a fingertip deep amount of water in the pot. Put on medium high heat and let steam about 8 minutes or until tender.... drain and mash with potato masher. Place back in pot and set aside.

Now in a seperate medium pan.... brown (more like beige) your ground turkey with onion flakes, garlic, salt and pepper on medium heat (takes about 5 minutes) and put into your cauliflour rice. In the same pan scramble up your eggs and also put that in the pan with the cauliflour rice :)

Now in the pot with all the meat, eggs and "rice" put on medium-high heat and put a few splashes of soy sauce and lemon.... mix it all together... then stir in "I can't believe its not butter".... I like my "fried rice" pretty well done so I tend to cook it for about another 5 minutes......

And you are done!

**** side note: we needed more fat so husband got an avacado... sliced that up, squeezed some lime in it, chopped up some cilantro and threw a lil salt in there and we garnished our rice with it....... WAS THE BOMB dot COM! :)

I need delicious food fast!!!! -husband

I just get home from crossfit and husband leaves for jiu jitsu in an hour.... we hangout on the couch for 45 minutes then husband looks at the tome and says "I need to eat dinner right now, and I want something delicious!" So we have precooked shrimp, eggs, unsweetened coconut flakes...... so mmmmm coconut shrimp!!!! :)  so we get to work........

Here is what you need....

-however many skrimpsss (yes I said skrimps) you want we did about 20

-2 eggs

-a lil squeeze of lime juice

-a pinch of garlic powder

-1 scoop of lean vanilla protein powder

-1 cup or more of unsweetened coconut flakes

While I rinse the precooked shrimp, husband makes the egg wash in a small bowl with a squeeze of lime juice... then I get a medium pan and completely fill the bottom with organic EVOO and turn the heat on medium. I then prepare a dish covered with a papertowl for the cooked shrimp to soak up extra oil.  

Now In a small mixing bowl I mix my dry ingredients (coconut flakes, protein powder, garlic powder)

Now time to cook!

Make sure your oil is hot!!!! (Do a tester shrimp and make sure when you place the shrimp in the pan that it sizzles) now one at a time dip your shrimp in the egg wash then in your dry ingredients and place in the pan(it should take 3-5 minutes to cook).... brown both sides and place cooked shrimp on your papertown covered plate.

***remember if the oil turns brown then you need fresh oil! :) no one likes burnt shrimp :)

Husband loved it and so did our kiddies :)

Who loves Mexican food??? Me!?

(This was hubby's size serving, he is a ZONE 5-blocker)
Ok, so I am pretty sure I could live off of Mexican food every single day..... but when I go to a restaurant I absolutely CAN NOT refuse the chips and guacomole.... so, I had to cook up an alternative that satisfied my Mexican tooth (not sweet tooth lol). This was simply amazing and satisfying..... tasted like I was cheating......
 Here is how Hubby and I did it....

Flank Steak about 2lbs
I seasoned mine and let it sit for a couple hours....
- 2 tsp chili powder
-2 tsp garlic powder
-fresh lime juice
-fresh cracked pepper
-sea salt

Spanish Rice (made with Cauli)
-1 Cauliflour head
-1 sliced carrot
-3/4 cups tomato sauce (no sugar added)
-2 tsp minced garlic
-2tsp onion flakes
-season w/chili powder, salt and pepper

Mashed avacado's
-1 ripe avacado
-1/2 TBS cilantro
-salt
-chili powder
-garlic powder


In a medium pot steam your cauliflour and carrots on medium-high heat for around 10 minutes or until they are soft.... and mash with potato masher, add tomato sauce... season and let simmer on low heat while you cook "Carne Asada"

After you season the Flank Steak, warm up a Cast-Iron pan on medium-high heat. Spray pan w/Olive Oil Spray and brown the meat..... YAY that is done!

For the Avacados.... I always cut the avacados in half, remove the pit and slice the avacados while they are still in their shell... then I remove with a spoon... put the chopped avacados in a bowl... add ingredients and ENJOY!!!! :)

In the picture was my husbands serving size.... unfortunetly, he eats way more than me... and had corn tortillas.....
I had 4oz of meat, 1 cup of cauli, and 1 TBS of avacados... it was filling for my tummy and brain :)

PS I had the left over steak w/eggs this morning and it was still just as good!

I want dessert.... but i still want to look good -my hubby

What do you do when you have a sweet tooth, but are loving the progress on your body???? Make a protein packed apple-strawberry crisp! :) I made this for my husband tonight and he loved it!!! Plus its pretty dang easy and fast to make!

Here is what you need....

*Preheat oven to 350

FILLING
-3 peeled, cored and thinly sliced apples

-1/2 scoop lite vanilla protein

-1 tsp cinnamon

-1/2 Tbs splenda brown sugar

-1 cup sliced strawberries

-packet of truvia

TOPPING
-2 packs of kashi go lean honey & cinnamon oatmeal

-1/2 scoop of vanilla protein

-1 tsp pumpkin pie spice

-6 tsp of I CAN'T BELIEVE ITS NOT BUTTER

Here is what you do....
In a medium non-stick skillet on medium-low heat put in all the filling ingredients. Sweat out the apples and strawberries until they are tender. Put filling in to a (aaahhh I forgot size) glass baking dish.
In a small mixing bowl combine packets of oatmeal, vanilla protein powder, pumpkin spice. Pour over filling and then put 6 tsp of (faux) butter on the topping....
Bake for 10 minutes and enjoy!

Protein, dessert and deliciousness!   






No chicken today pleeease - strawberry smoothie

I am inbetween paydays..... and all we have left is chicken in the fridge! So while I'm at home for lunch I look through my fridge and freezer and decide to just have a protein smoothie for lunch..... and boy let me tell you... I hit my sweet tooth and I feel sassyfied :)
(I recommend eating real food as much as possible but today I am bored with chicken!)

Here's what you need

-1.5 cups frozen strawberries

-1 cup of water (more or less depending on how thick you like it... I like it to be as thick as ice cream so I use as little as possible)

-I scoop lite strawberry protein powder

Put all the ingredients in a blender and blend! :)

I just got done eating mine..... and it was so yummy!

Tips for the healthy YOU!!!

I wanted to create a short list for my people to have to start their new healthy living...... so I am giving a few easy tips! :)

-do not diet!!!!!! Just eat healthy MOST of the time

-eat protein with every meal (eggs, fish, shellfish, chicken, elk etc)

-do not drink your calories!!!! (Coffees, lattes, soda, juice be careful for these sugar packed beverages)

-always eat breakfast! While your sleeping your metabolism slows... its so important to put fuel in the engine and revvvvvv it up! :)

-drink lots of water

-get at least 8 hours of sleep!

****** IMPORTANT! clean your fridge and cupboards! We are only human.... meaning 99.99% of us have no self discipline when it comes to food..... so if we keep sugar cereals, sugar snacks, and junk food in our house then we will eat it.... and if you have kids, then feed them healthy food and start healthy habits

I really want the focus to be on being healthy over dropping the weight fast because we all know crasf and fad diets do not work..... I love you all and hope these easy tips help.....

Salmon leftovers transformed into salmon cakes

Ok so these are semi-cheat, semi-zone... fully delicious salmon cakes.....  and they are super simple and take almost no time to make.....

Here is what you need

-10 oz cooked salmon

-4 corn taco shells

-3 egg whites

-extra virgin olive oil

-1 tsp garlic powder

-1 TBS onion flakes

*prepare a plate with a napkin on it for cooked patties, to soak up all extra oil

All you do is finely crush the taco shells in a sandwich bad..... then put all of the above in a mixing bowl.... mix it up, make in to patties then cook in olive oil... and you are done!! :)

Garnish w/what you want.... hubby used salsa and I used homemade pesto :)

Catch of the day :)

My Saturday lunch...
This recipe is to be honest..... simple and the bomb dot com :)
I used salmon from costco and organic sundried tomatoes.....

-2 boneless salmon fillets
-organic sundried tomatoes
-pinch of salt
-pepper

Heat oven to 400 degrees

first thing you do is turn on your oven.... then line your pan with a stainless steel protectant.... well that or foil :)

I start by rinsing my fish and place it on the foiled and sprayed pan. I then loosely dice the sundried tomatoes, and put them on the fish.

Put that in the oven for 30 minutes and you have gourmet yummy fish :)

As you can see.... I'm a creature of habit and paired it with a side of asparagus...... I love asparagus :)

taste just like chicken.....

Well, that or Turkey....
Here we have some yummy paleo delicousness....
-5oz of seasoned lean ground turkey sausage patties w/1/2 TBS of pesto
grilled on my friend... the George Foreman
-1 1/2 cup steamed and mashed cauliflour (rice)
(cut all the stems off the asparagus, steam really well, then mash w/a potato masher and put on a little salt and pepper.... mmm taste and feels just like rice
-15 baked asparagus spears w/salt, pepper and herbs

This was so delicious and very filling.... I think I want to eat this again

My body is my engine.... this is my fuel 2-11-2010

I went to a nutrition Seminar at Crossfit Marysville w/Todd Widman and he basically said if your body is an engine.... then think of it as the best engine in the entire world..... now lets think of our food as our fuel.... what kind of fuel are you putting into your engine.... high quality fuel that will help it perform better or crappy fuel that makes you slow, doesn't last as long and leaves behind mushy, sticky sludge???

Me? today my fuel is....
Breakfast: 1 cup of oatmeal, 1 TBS of organic peanut butter, 1 scoop lowfat and sugar free choco protein powder (notes: taste like a no-bake cookie... it is sooooo delicious!!!!)

Lunch: 5oz chicken breast grilled w/a lil taco seasoning, topped w/fresh salsa and 1 TBS avacado and put on 2 pieces of butter lettuce w/side of 1 cup steamed asparagus and a kiwi (notes: This was filling and tasted soooo good... I started eating it slow so it would last longer lol)

Snack: 2 hardboiled eggs w/egg yolks mixed w/avacado and 1 cup of steamed brocolli

Dinner: will be baked salmon topped w/pesto and tons of cups of steamed asparagus mmmmmmmm I can't wait!!!!

Oomph for life

What is oomph? To me.... it means living life to the fullest while being the happiest person I can be....
How do I achieve oomph in my life? I would say this will come from overall well being... in the 4 elements of Native health... in the physical, mental, emotional and spiritual.....

I am creating this blog to track my oomphyness to keep my accountable.... I will be posting what I am eating... my workouts, what motivates me..... I will even track my humaness and let you know my struggles on staying oomphy at all times :)

So lets start today!!!!

Thank goodness that we have today! I hear my daddy say "There are too many tomorrows" and that motivates me everyday.... for the past 2 weeks I have been getting up at 5:00am and leaving my husband and 3 kids sleeping to go workout at Crossfit Marysville.... I have a hard time finding time to workout sooooo I created time.... I set up an alarm on my phone that goes off at 5am monday-friday, I also started sleeping in my workout clothes and leave my workout shoes by the door..... no excuses.... and guess what!? I feel great!!! The 5am workout really give me extra oomph to make it through my day..... I have energy and it motivates me to eat better....
so lets so our goal for the day.... and that will be to quit making excuses and say "If I don't have time to workout, I will create time to workout" it can be earlier in the morning, or a lunchtime jog, right after work or right before bed.... CREATE time for your health TODAY... because there are too many tomorrows and "Tomorrow may never come"
